Mushroom Meat Loaf
Ingredients:
- 3 Tbsp butter
- 2 Tbsp olive oil
- 1/4 lb white button mushrooms, wiped clean, trimmed and chopped
- 1/4 lb shiitake mushrooms, wiped clean, trimmed and chopped
- 1 cup chopped onions
- 1 large garlic clove, minced
- 3/4 cup cooked Falcon Medium Grain Rice
- 1/4 cup heavy cream
- 2 Tbsp finely chopped fresh parsley leaves or Zatarains Parsley Flakes
- 1-1/2 lbs ground veal
- 1 lb ground pork
- 2 large eggs, beaten
- 2 tsp salt
- 1/4 tsp Cajun Chef Cayenne Pepper
Steps:
Heat the butter and oil in a large, heavy pot over medium heat. Add the mushrooms, onions, and garlic. Cook, stirring often, for about five minutes, or until the onions are wilted. Add the rice and cream and mix well. Cook for two to three minutes, or until the mixture thickens slightly. Stir in the parsley. Remove from the heat and cool to room temperature. Preheat the oven to 350° F.
In a mixing bowl, combine the veal and pork. Add the eggs, salt, and cayenne. Add the rice and vegetable mixture and mix well. Transfer to a baking pan and form into a flat loaf. Bake for about one hour, or until the juices run clear. Let the loaf cool a bit before slicing to serve. Makes about 8 servings.
