Whole Wheat Bran Rolls
Ingredients:
- 1 cup milk
- 1 cup bran cereal
- 2 packages dry yeast
- ½ cup warm water
- ¾ cup vegetable oil
- 3 eggs, beaten
- 2 Tbsp. STEENS Dark Molasses
- 2 Tbsp. light brown sugar, packed
- 1 ½ tsp salt
- 3 cups whole wheat flour
- 2 cups white flour
- 1 Tbsp vegetable oil
Steps:
In a small sauce pan, scald milk. Remove from heat and add cereal. Cool to lukewarm. In a small bowl, dissolve yeast in warm water. In a large bowl, mix oil, eggs, molasses, brown sugar, and salt and beat thoroughly. Add milk and yeast mixture. Add 2 cups of whole wheat flour, saving remaining 1 cup, and stir vigorously. Stir in white flour. Spread remaining 1 cup whole wheat flour on a smooth surface. Turn dough onto floured surface and knead 5 to 10 minutes until smooth. Grease a large bowl with oil. Place dough in bowl and turn to grease top. Cover and let rise in a warm place for 1 hour, 30 minutes or until doubled. Roll out onto wax paper or lightly floured surface to about ½ inch thick. Cut with a 3-inch biscuit cutter. Fold dough pieces and place on a greased baking sheet. Let rise for 60 minutes more. Bake at 350° for 15 to 20 minutes or until golden browned. Makes about 2 ½ to 3 dozen.
